Today I will tell you how to cook carrot soup with coconut milk. For this dish, it is best to use juicy carrots. The final result depends on its taste, so I recommend always trying the vegetable before cooking!
Ingredients
- Coconut milk - 400 ml
- Carrot - 350 g
- Ginger - 10 g
- Onion - 1 piece
- Butter - 60 g
- Cream - 2 tbsp.l.
- Ground red pepper - to taste
- Salt - to taste
- Water - 600 ml
- Greens (for decoration) – 1 twig
Step-by-step cooking recipe
Cut carrots into circles, pour cold water and boil for 25 minutes over low heat.
Peel ginger and onion and finely chop.
Melt the butter in a frying pan, add the onion, ginger and fry for 3-4 minutes.
In a saucepan with carrots, add the roast, coconut milk and ground red pepper. Boil for 5 minutes.
Grind the mass with an immersion blender until smooth.
Add cream, salt and heat for 2 minutes on low heat.
Pour the finished soup on plates and garnish with herbs.
