An interesting option for making refreshing summer okroshka is okroshka with beetroot. I advise you to use kefir as a dressing – so it will get a beautiful pink shade. The dish only wins!
Ingredients
- Kefir - 1 l
- Cucumbers - 1 piece
- Beetroot - 1 piece
- Potatoes - 1 piece
- Boiled sausage - 200 g
- Greenery - 1 bundle
- Mustard - 1 art.l.
- Sour cream - 40 g
- Water - 500 ml
- Spices and seasonings - 1 tsp.
- Chicken eggs - 3 pieces
Step-by-step cooking recipe
Boil the eggs, potatoes and beets until tender.
Grate the beetroot, and cut the rest of the ingredients into cubes. Chop the greens.
Mix everything with mustard, sour cream and spices, and pour kefir.
If desired, add more water to the consistency.
