Caviar from overripe cucumbers for the winter

Didn't have time to harvest in time and now huge cucumbers are lying on the beds? Do not rush to throw them away. It is better to prepare tender caviar from overripe cucumbers. The snack can be served immediately or closed in jars for the winter.
Ingredients
- Cucumbers (overripe) – 2 kg
- Carrots - 500 g
- Onion - 500 g
- Garlic - 5 cloves
- Tomato paste - 50 g
- Olive oil - 3 tbsp.l.
- Apple cider vinegar - 3 art.l.
- Sugar - 80 g
- Salt - 80 g
Step-by-step cooking recipe
Peel cucumbers, cut in half lengthwise and remove the core with seeds.
Chop cucumbers, carrots and peeled onions.
Mix cucumbers with butter, sugar and simmer for 10 minutes on low heat.
Add onion, carrot, tomato paste and cook for another 10 minutes, stirring occasionally.
Add salt, chopped garlic and simmer for 10 minutes.
Pour in the vinegar, stir, simmer for 2-3 minutes and close in the prepared jars.
