“Ancl Bens" of zucchini with tomatoes and pepper for winter
The legendary products of the American brand “Ancl Bens" conquered our hearts (and stomachs!) in the distant 90s. Today I propose to plunge into memories and cook at home for the winter a salad of zucchini from everyone's beloved uncle Ben.
Ingredients
- Young zucchini - 500 g
- Tomatoes - 2 pcs.
- Bell pepper - 2 pcs.
- Garlic - 3 cloves
- Tomato paste - 1 art.l.
- Water - 300 ml
- Vegetable oil (refined) – 1 tsp.
- Vinegar (9%) – 1 tsp.
- Sugar - 50 g
- Salt - 1 tsp.
Step-by-step cooking recipe
Wash the tomatoes, cut into slices and place in a cooking pot.
Dilute the tomato paste with water, pour it into a saucepan with tomatoes. Add salt and sugar, mix well, bring to a boil and cook over low heat, stirring, for 10 minutes.
Peel the bell pepper from the seeds and stalks, cut into small pieces. Cut the zucchini into cubes (if you have young zucchini, it is not necessary to peel them).
Place the sliced zucchini and pepper in the boiling tomato mass, add vegetable oil. Mix everything well, bring it to a boil again and boil over low heat for 15 minutes.
Add the chopped garlic and cook for another 15 minutes, stirring occasionally.
A couple of minutes before cooking, add vinegar, mix.
Pack the boiling salad in pre-sterilized jars, roll it up, turn it upside down, wrap it up and leave it to cool completely. The cooled workpiece is well stored at room temperature.
