Variations of lecho can be prepared from a wide variety of vegetables. For example, from patissons – and this is the recipe I will share with you this time. A delicious and light lean dish is a ready–made snack, salad or even a side dish for meat.
Ingredients
- Patisson - 1 kg
- Bell pepper - 1 kg
- Tomatoes - 1 kg
- Onion - 3 pieces
- Vegetable oil - 50 ml
- Parsley root - 2 pieces
- Coriander - 0.5 tsp.
- Sugar - 1.5 tbsp.l.
- Salt - 1 tbsp.l.
- Vinegar - 1 art.l.
Step-by-step cooking recipe
Peel the tomatoes and chop them in a blender. Randomly chop the remaining ingredients.
Fry the onion in oil until transparent.
Add pepper, and after 7 minutes - squash. Cook for another 5 minutes.
Add the parsley root, sugar, tomato paste, salt and coriander.
Simmer for half an hour on low heat, pour in the vinegar, simmer for another 5 minutes and roll the lecho into sterile jars.
