Today I will tell you how to simply and quickly prepare a delicious and fragrant mushroom delicacy for the winter, namely mushroom caviar. Absolutely any mushrooms that are suitable for cooking and frying will do. With forest, of course, it will turn out more fragrant. Shall we try?

Peel and rinse the mushrooms well, cut large specimens arbitrarily. Boil the mushrooms in salted water for 30-40 minutes after boiling, do not forget to periodically remove the foam. Then flip it into a colander.

Peel the carrots and grate them on a coarse grater, chop the onion finely.

In preheated vegetable oil, fry the carrots until half cooked, add the onion and fry together for 2-3 minutes.

Cut the tomato into small cubes and send it to the frying pan with carrots and onions.

Chop the garlic and add it to the vegetables. Add salt to the mass, add pepper to taste and simmer for 7-10 minutes, stirring occasionally. Remove the pan from the heat and transfer the vegetable mass to another container.

Fry the mushrooms in the remaining oil in the pan, cool.

Put mushrooms through a meat grinder, and then vegetables. Stir the mixture until smooth.

Place the hot caviar in pre-sterilized jars, seal tightly, turn over, wrap and leave until completely cooled. Store the workpiece in a cool, dark place.
