One of the best finds of Balkan cuisine is aivar. A popular preparation is made on the basis of baked pepper, sometimes with the addition of other vegetables. Today I want to share with you just such a regional recipe – with eggplants. A solid pleasure!

Bake the peppers and eggplants separately from each other in the oven at 200 degrees until scorched.

Wrap the hot pepper in a bag and leave for 10 minutes. Do the same with eggplants.

After that, easily peel the vegetables and pass them through a meat grinder or grind with a blender.

Add garlic, salt, pepper and oil. Boil the aivar for 15 minutes on low heat, stirring.

Pour in the vinegar, put the ivar in sterile jars and roll it up.
