Recipe for lovers of vegetable snacks. This time we will cook cucumber lecho with tomatoes and bell pepper. You can quickly chop vegetables using a blender or a food processor. Adjust the size and shape of the pieces yourself.
Ingredients
- Cucumbers - 1,5 kg
- Tomatoes - 2 kg
- Bell pepper - 500 g
- Onion - 300 g
- Vegetable oil - 100 ml
- Vinegar - 80 ml
- Bay leaf - 3 pieces
- Black Pepper - 10 peas
- Sugar - 5 tbsp.l.
- Salt - 2 art.l.
Step-by-step cooking recipe
Peel the tomatoes and pass them through a meat grinder.
Chop cucumbers, peeled bell peppers and onions.
Pour the tomato stock into a deep saucepan, add sugar, salt, spices and boil for 15 minutes.
Add oil, cucumbers, onion, bell pepper and cook for 20 minutes over low heat.
Pour in the vinegar and remove from the heat after 1 minute.
Spread the hot lecho in clean, dry jars and roll it up.
