Mayonnaise gives the classic eggplant caviar an additional softness of texture, tenderness and taste, and also helps to preserve the dish during the winter. This caviar can be served on bread, as a filling for sandwiches, or used for making salads.

Ingredients

  • Eggplant - 4 pieces
  • Onion - 2 pieces
  • Mayonnaise - 1 tbsp.l .
  • Salt - 0.5 tsp.
  • Spices and seasonings - 1 tsp.
  • Vegetable oil - 120 ml
  • Vinegar - 3 art.l.

Step-by-step cooking recipe

Peel the eggplant and finely chop. Finely chop the onion, too.

Fry everything in oil until browned and pass through a meat grinder.

Add mayonnaise, vinegar and spices.

Put the caviar in sterile jars, sterilize them for another 10 minutes and roll up.
