Today we will prepare a delicious and bright vegetable preparation for the winter - a Greek snack with beans. Such an appetizer will greatly diversify your menu in winter, will become a full-fledged dish of the lean table, and will also perfectly complement your first courses and vegetable stews.
Ingredients
- Beans (boiled) – 1.5 glasses
- Tomatoes - 100 g
- Carrots - 100 g
- Onion - 80 g
- Bell pepper - 60 g
- Tomato juice - 1 glass
- Vegetable oil - 2 art.l.
- Vinegar (9%) – 2 art.l.
- Water - 80 ml
- Salt - 1 tsp.
- Sugar - 1 tsp.
- Paprika - 1 tsp.
Step-by-step cooking recipe
Pre-soak the beans in cold water overnight, then rinse and boil until tender.
Grate carrots on a coarse grater, cut onions into half rings, tomatoes - medium cubes. Peel the Bulgarian pepper from the seeds and cut into strips.
Combine the chopped vegetables in a frying pan, add water and vegetable oil, stir and simmer for 10 minutes over medium heat.
Add beans, tomato, sugar and paprika, salt.
Simmer the workpiece over low heat for 60-70 minutes. A couple of minutes before cooking, add the vinegar, stir and remove the pan from the heat.
Pack the hot Greek snack in pre-sterilized jars, roll it up, turn it upside down, wrap it up and leave it to cool completely. Store the cooled billet in a cool pantry.
