I prefer to cook homemade pickle on chicken. Ideally, if you have whole pieces of carcass with skin and bones – so the broth turns out even more fragrant and rich. The meat can be completely removed in the process or added back before serving.
Ingredients
- Chicken - 500 g
- Pearl barley - 100 g
- Cucumber pickle - 140 ml
- Pickled cucumbers - 300 g
- Carrots - 2 pieces
- Potatoes - 4 pieces
- Marjoram - 1 tsp.
- Spices and seasonings - 1 tsp.
Step-by-step cooking recipe
Boil the chicken for about 40 minutes until tender. Optionally – with spices or roots.
Cut all the vegetables into cubes.
Add the pearl barley to the broth and cook for 15 minutes. Add the potatoes.
After another 10 minutes, add the carrots, and after another 10 – cucumbers and brine.
Bring the pickle to a boil, season to taste and remove from heat.
