Plums traditionally go to the classic Georgian tkemali. But you can go further and make it even more interesting. For example, this kind of peach tkemali definitely deserves attention if you like unusual fruit sauces.
Ingredients
- Peaches - 1.5 kg
- Salt - 2 tbsp.l.
- Sugar - 2 tbsp.l.
- Cilantro - 4 twigs
- Hot red pepper - 1 piece
- Garlic - 5 teeth
- Ground coriander - 1 tsp.
- Spices and seasonings - 1 tbsp.l.
Step-by-step cooking recipe
Pour boiling water over the peaches for a couple of minutes. Peel off the skin and remove the bones.
Put them through a meat grinder with garlic, pepper and cilantro.
Boil the mass for about half an hour on low heat.
Add the remaining ingredients and boil the tkemali for another 15-30 minutes until the desired density.
Roll up the sauce for the winter in sterile jars.
