According to one version, the royal gooseberry jam with nuts was once presented to Catherine the Great by an old cook. The recipe for this delicacy has survived to this day. Anyone can cook it. I tell you the recipe in detail.
Ingredients
- Gooseberry - 2 kg
- Walnuts - 400 g
- Cherry leaves - 100 g
- Sugar - 1,5 kg
- Vanillin - at the tip of the knife
- Citric acid - 0,5 tsp.
- Vodka - 50 ml
- Water - 500 ml
Step-by-step cooking recipe
Fill the gooseberries with ice water for 2 hours.
Boil the water, pour in the cherry leaves and boil for 5 minutes.
Cool and strain through cheesecloth.
Mix the resulting broth with vanilla, vodka, sugar and boil for 2 minutes.
Place the gooseberries in a large saucepan, pour hot syrup and leave under the lid for 30 minutes.
Dry the walnuts in a frying pan, and then drain off the excess husks.
Chop the nuts in a blender or finely chop with a knife.
Put a saucepan with gooseberries on low heat and bring to a boil. Add citric acid, nuts and cook for 15 minutes, stirring occasionally.
Arrange the hot jam in sterilized jars and roll it up.
