If you want to make wild quince jam, be patient and prepare a sharp knife. Hard fruits will have to be cleaned from numerous damages. Nevertheless, the difficulties end there. The recipe itself is surprisingly simple.
Ingredients
- Quince (wild) – 3 kg
- Sugar - 2 kg
- Citric acid - on the tip of the knife
- Water - 2,5 l
Step-by-step cooking recipe
Cut the quince in half, clean from seeds and damage, finely chop.
Put the pieces of fruit in a saucepan with a thick bottom, pour 2 liters of water and boil for 10 minutes.
Put the quince in a colander and cool.
Boil the remaining water, add sugar and boil for 5 minutes.
Pour quince slices into the syrup, cover with a lid and simmer for 10 minutes. Turn off the heat and leave to soak in the syrup for 1 hour.
Bring the mass to a boil again, boil for 20 minutes and remove from heat.
After 1 hour, put the pan on the fire, add citric acid and cook for another 5-7 minutes.
Arrange the hot jam in clean, dry jars and roll it up.
