If there were no fresh tomatoes at hand, a wonderful lecho of zucchini can be prepared with tomato juice. The main thing is that it should be thick and natural. In this case, the difference is not particularly fundamental at all – practically the same grated tomatoes.

Step-by-step cooking recipe

Boil the tomato juice with sugar and salt, and boil for 15 minutes.

Add the chopped vegetables and cook for another half hour.

Add vinegar and spices to taste.

Boil the lecho for a couple more minutes and roll it into sterilized jars.
