Solyanka with cucumbers and pearl barley for winter

Take care of your nutrition in winter in advance. In the season of fresh vegetables, prepare a hodgepodge with cucumbers and pearl barley. The billet can be served as a hearty salad, but most often it is used to make a traditional soup.
Ingredients
- Pearl barley - 300 g
- Cabbage - 1 kg
- Cucumbers - 500 g
- Turnip - 200 g
- Carrots - 500 g
- Onion - 500 g
- Vegetable oil - 60 ml
- Vinegar - 120 ml
- Black Pepper - 6 peas
- Ground coriander - 0,5 tsp.
- Salt - 50 g
- Water - 2 l
Step-by-step cooking recipe
Pre-soak the pearl barley for 5-6 hours.
Chop cabbage, cucumbers, peeled turnips and onions. Grate the carrots.
Fry onions and carrots in a deep cauldron for 5 minutes.
Add turnips, barley, spices, salt and simmer for another 10 minutes.
Add cabbage, cucumbers, water and simmer under the lid for 30 minutes.
Pour in the vinegar and turn off the heat after 2 minutes.
Put the hodgepodge in clean, dry jars, roll it up and wrap it with a thick towel.
