I am glad to share the recipe of the salad "Leapfrog" of eggplant. In winter, it will be a great addition to any lunch or dinner. To prepare the dish, you will need fresh vegetables and spices that will create a bright and rich taste. I am sure that this salad will not leave any gourmet indifferent!
Ingredients
- Onion - 1 kg
- Tomatoes - 1 kg
- Bell pepper - 1 kg
- Eggplant - 1 kg
- Carrots - 1 kg
- Vegetable oil - 2 glasses
- Salt - 2 tbsp.l.
- Sugar - 2 tbsp.l.
- Vinegar (essence) – 1 art.l.
- Spices and seasonings - 1 tbsp.l.
Step-by-step cooking recipe
Coarsely chop all the vegetables.
Add sugar, salt, oil, spices and vinegar essence.
Bring the billet to a boil and simmer the salad for 1.5 hours on low heat.
Roll it up in sterilized jars.
