This recipe is as similar as possible to the original. Adjika from hot pepper is prepared without the addition of tomatoes, eggplants and other vegetables. If you do not plan to close the seasoning for the winter, skip the sterilization stage.
Ingredients
- Hot red pepper - 2 kg
- Garlic - 120 g
- Olive oil - 100 ml
- Vinegar - 80 ml
- Utsho-suneli - 0,5 tsp.
- Ground coriander - 0,5 tsp.
- Fenugreek - 0,5 tsp.
- Sugar - 180 g
- Salt - 60 g
Step-by-step cooking recipe
Cut the hot pepper in half and peel off the seeds.
Disassemble the garlic into cloves and peel off the husk.
Chop the prepared vegetables in a blender.
Add spices, butter, sugar and salt. Stir, cover and set aside for 1 hour.
Spread the adjika in clean, dry jars, sterilize for 10 minutes, pour in the vinegar and roll up.
