Duck dishes have a rather specific smell, which is not clear to everyone. To avoid this, soak the bird in cold water and rinse thoroughly. I tell you how to cook delicious sorrel soup with duck!
Ingredients
- Duck - 500 g
- Chicken eggs - 2 pieces
- Sorrel - halfpuchka
- Parsley - 4 twigs
- Allspice - 2 peas
- Ground black pepper - to taste
- Salt - to taste
- Water (filtered) – 3 l
Step-by-step cooking recipe
Wash the duck, cut it and fill it with cold water for 3 hours.
Change the water, add allspice and cook for 2 hours on low heat. Remove the foam that will appear when cooking.
Break the raw eggs into a bowl, season with salt and pepper and lightly whisk with a fork.
Stirring constantly, gently pour the egg mixture into the saucepan with the duck. The eggs will boil and turn into beautiful threads.
Add chopped sorrel and parsley, add salt and turn off after 2 minutes. Infuse the soup under the lid for 10 minutes.
When serving, you can decorate plates with soup with sliced pieces of boiled eggs.
