Ingredients
- Applesauce - 250 g
- Dogwood - 400 g
- Agar-agar - 18 g
- Egg whites - 2 pieces
- Sugar - 700 g
- Water - 400 ml
Step-by-step cooking recipe
Place the dogwood in a saucepan, add 100 ml of water and boil for 20 minutes.
Rub the soft berries through a sieve.
Mix the resulting mass with applesauce, egg whites and 200 g of sugar. Beat with a mixer at high speed for 5-7 minutes.
In a small ladle, mix hot water, agar-agar and the remaining sugar. Bring to a boil and boil for 5 minutes.
Mix the syrup with a preparation of proteins and fruit puree. Beat with a mixer for 1-2 minutes.
Using a pastry syringe and a special nozzle, place the marshmallows on a baking sheet covered with baking paper. Dry for 24 hours at room temperature.
Separate the finished dogwood marshmallows from the paper and connect them in pairs.
