Mochi with ice cream is a popular, outstanding and, as for me, an ideal cold dessert in the hot season. For the filling, pistachio, chocolate, vanilla ice cream or ordinary ice cream is best suited. Choose according to your taste.
Ingredients
- Rice flour (adhesive) – 100 g
- Sugar - 50 g
- Water - 180 ml
- Food coloring - optional
- Corn Starch - 30 g
- Ice cream (any) – for filling
Step-by-step cooking recipe
Take the ice cream out of the freezer and let it melt a little at room temperature. Then use a spoon to form 10 small balls, put them in an ice mold and send them back to the freezer.
Combine flour and water in a bowl, mix until pasty, add sugar, continue stirring until the sugar is completely dissolved. If you decide to cook colored mochi, at this stage add food coloring to the dough.
Cover the bowl with the dough with cling film, send it to the microwave for 2 minutes (maximum power). Then remove the film, knead the dough and send it to the microwave for another 30 seconds, knead it again.
Cover the table with cling film, sprinkle with corn starch. Lay out the slightly cooled dough and lightly flatten with a spoon, sprinkle generously with starch. Divide the dough into 10 tortillas.
Form a mochi: put a ball of ice cream in the center of each tortilla, close the dough and give it a neat round shape.
Keep mochi with ice cream in the freezer before serving.
