Pre-soak the beans for 4 hours.
Flip into a colander, rinse and transfer to a saucepan with clean water.
Add the bay leaf, black pepper and peas and cook for 40 minutes over low heat.
Take 1 cup of broth, drain the rest of the liquid.
Remove the bay leaf and black pepper, remove the beans to cool.
Peel the onion and finely chop it.
Put on a preheated frying pan with oil and fry until transparent.
