Wash the ears with hot water, dry them and thoroughly scorch them with a felt tip.

Scrape the surface with a knife, paying special attention to hard-to-reach places.

Rinse your ears with hot water and transfer to a deep saucepan. Boil for 2-2.5 hours.

Remove the ears from the water, put them on a plate and cool.

Cut the ears into strips and put them in a bowl.

Sprinkle with sugar, salt, spices and pour hot oil. Stir, cover and set aside for 10 minutes.

Add garlic, vinegar, soy sauce, sesame seeds and finely chopped green onions passed through the press.
