Classic pesto is made from basil and pine nuts. What if we replace these ingredients with spinach and cashews? I decided to experiment and was satisfied with the results. The sauce turned out fragrant, slightly sour, but very tasty.

Ingredients

  • Spinach - 200 g
  • Parmesan - 80 g
  • Cashews - half a glass
  • Olive oil - 3 tbsp.l .
  • Garlic - 1 clove
  • Ground black pepper - to taste
  • Salt - to taste

Step-by-step cooking recipe

Wash the spinach, remove the stiff stems.

Dip the spinach in boiling water for 30 seconds, then rinse with ice water and leave to drain in a sieve.

Chop the cashews in a blender, grate the cheese on a fine grater.

Chop spinach and cheese in a blender.

Add cashews, butter, ground pepper, salt and garlic passed through the press. Turn on the blender for another 40-60 seconds.
