Chop the zucchini, carrots, peeled bell peppers and onions.
Make cross-shaped incisions on tomatoes, scald with boiling water, peel and slice.
Fry onions and carrots in vegetable oil until golden brown.
Add eggplant, zucchini, bell pepper, tomatoes and black pepper peas. Cover and simmer for 10 minutes.
