I present to your attention an excellent recipe for stew without potatoes. To give the vegetables the necessary sourness, I add lemon juice. But it is not necessary to do this, especially if the tomatoes are sour enough.

Cut the eggplants, put them in a bowl and pour cold water with salt for 10 minutes. Drain and squeeze lightly.

Chop the zucchini, carrots, peeled bell peppers and onions.

Make cross-shaped incisions on tomatoes, scald with boiling water, peel and slice.

Fry onions and carrots in vegetable oil until golden brown.

Add eggplant, zucchini, bell pepper, tomatoes and black pepper peas. Cover and simmer for 10 minutes.
