I love stew because it can be done in different ways all the time and not be repeated. It is enough to replace or add a few ingredients – and now a completely different taste. In this recipe, I added a little pumpkin to the usual set of vegetables.
Ingredients
- Pumpkin - 300 g
- Zucchini - 200 g
- Onion - 1 piece
- Cauliflower - 200 g
- Tomatoes - 2 pieces
- Bell pepper - 1 piece
- Garlic - 3 clove
- String beans - 100 g
- Vegetable oil - 10 ml
- Ground black pepper - 1 pinch
- Salt - 1 pinch
- Parsley (chopped) – 1 art.l.
Step-by-step cooking recipe
Finely chop the onion and garlic, and fry them in vegetable oil.
Peel the tomatoes and chop them in a blender. You can use canned tomatoes in their own juice.
Disassemble the cauliflower into small inflorescences and lower it into boiling water for 2-3 minutes.
Cut pumpkin, zucchini and pepper into cubes.
Pour the tomatoes into the onion and garlic, and add the rest of the vegetables, string beans, salt and pepper.
Simmer all together until tender – about 40 minutes. At the end, sprinkle the pumpkin stew with herbs.
