Wash the pork, dry it with paper towels and cut into medium-sized pieces.
Chop the cabbage, grate the carrots. Peel the onion from the husk and cut into thick half rings.
Preheat a dry frying pan and fry the meat for 5-7 minutes.
Add salt, onion and cover for 3 minutes.
Remove the lid, pour in the bay leaf, crushed allspice peas and fry for another 7 minutes.
Add carrots, both types of cabbage and mix well. Turn down the heat and cook under the lid for 25-30 minutes.
Before turning off, add salt and pepper. Serve the finished bigos in a deep bowl, garnished with fresh parsley.
