Bigus is a very interesting Polish and Lithuanian dish based on sauerkraut. In pots, it turns out even more tender and fragrant. Depending on whether you add meat, it will be an amazing main dish or side dish.
Ingredients
- Cabbage - 400 g
- Sauerkraut - 400 g
- Beef - 200 g
- Pork - 200 g
- Bacon - 200 g
- Smoked sausage - 200 g
- Tomatoes - 2 pieces
- Onion - 1 piece
- Bell pepper - 1 piece
- Apples - 1 piece
- Mushrooms - 6 pieces
- Wine (white) – 3/4 glasses
- Tomato paste - 3 art.l.
- Spices and seasonings - 2 tsp.
- Salt - to taste
Step-by-step cooking recipe
Chop the onion and fry until golden. Add sauerkraut with tomato paste to it, and simmer for an hour under the lid on low heat.
Chop fresh cabbage and mash with salt with your hands.
Finely chop the remaining ingredients, including all the meat.
Fry the bacon separately, add pork and beef to it, and sausage at the end.
Mix all the ingredients together, season and arrange in pots.
Pour the wine, and then the remaining juice.
Bake the bigus for 2 hours at 160 degrees.
