You will need Greek filo dough for this pie, but we are not looking for easy ways and we will cook it ourselves. The process is long and tedious, but overall very interesting. You will be surprised how pliable and stretchy the dough can be!

Mix warm water, bite, butter, yolks and salt.
Pour in the sifted flour and knead the dough. It is necessary to knead intensively and for a long time, at least 20 minutes, so it is better to use a food processor.
Wrap the finished dough in plastic wrap and put it in the refrigerator for 1 hour.
Divide the dough into 10 identical pieces, sprinkle the table with starch.
Roll out one piece as thinly as possible, brush with oil and pull out with your hands until transparent. Repeat the steps with the remaining pieces. Spread the finished test sheets on top of each other.
Wash the spinach with boiling water and finely chop it.
Chop the parsley and feta.
Mix spinach, feta and parsley. Add salt and ground pepper to taste.
Lubricate the mold with oil, lay out half of the sheets.
Spread the spinach and feta filling evenly.
Put the remaining sheets on top. Use a sharp knife to draw squares.
Grease the pie with olive oil and bake for 35-40 minutes in the oven at 180 degrees.
