Peel the apples, slice and sprinkle with lemon juice.

Wash the eggs, dry them, divide them into whites and yolks.

Rub the yolks with sugar until white.

Whisk the whites with salt until sharp peaks.

Mix the sifted flour with the zest and baking powder.

Pour the dry billet into the yolk mass and mix.

Add the whipped whites in small portions and mix until smooth.

Cover the mold with baking paper, brush with butter and lay out the apples.
