In autumn I often cook pumpkin pancakes. Today I will share a recipe for a salty dish that can be served with sauces, ketchups and just like that. For cooking, pumpkin is traditionally boiled and mashed. Otherwise, everything is very simple.
Ingredients
- Pumpkin - 300 g
- Sour cream - 50 g
- Chicken eggs - 2 pieces
- Flour - 100 g
- Baking powder dough - 0,5 tsp.
- Ground black pepper - to taste
- Salt - to taste
- Vegetable oil - 80 ml
- Water - 100 ml
Step-by-step cooking recipe
Peel the pumpkin, cut into small pieces and put it in a small saucepan.
Add water and simmer for 15-20 minutes. By the end, the water should completely evaporate.
Mash the boiled pumpkin with a pusher or chop it with a blender.
Mix eggs with sour cream, salt and ground pepper.
Add pumpkin puree, flour and baking powder. Mix the dough until smooth.
Heat the oil in a frying pan, spoon out small islands of dough and fry until golden brown on both sides.
