- Custard (cold) – 120 g

Step-by-step cooking recipe
Defrost the puff pastry at room temperature.
Sprinkle the table with flour, lay out the dough and roll it out with a rolling pin, moving exclusively in one direction.
Cut 12 identical triangles.
Put a little custard, turn the sides inside and roll the roll. Repeat the steps with the remaining blanks and cream.
Cover the baking sheet with parchment paper, lay out the croissants, cover with a towel and leave in a warm place for 1 hour.
Lubricate the croissants with a mixture of yolk and milk.
