Oatmeal cookies are a favorite childhood treat, especially with a glass of fresh milk. I've been experimenting for a long time with how to diversify it, but at the same time make it even more useful. And now I'm ready to share one of the options!
Ingredients
- Pumpkin - 150 g
- Flour - 1 glass
- Oat flakes - 1 glass
- Spices and seasonings (cinnamon, ginger, nutmeg) – 2 tsp.
- Salt - 1 pinch
- Honey - 1 tbsp.l.
- Chicken eggs - 1 piece
- Butter - 90 g
Step-by-step cooking recipe
Cut the pumpkin into cubes, boil for about 20 minutes and grind to a smooth puree in any convenient way.
Mix flour, oat flakes, salt and spices to taste. For example, I like cinnamon, ginger and nutmeg.
Separately mix softened butter with honey. Add the pumpkin puree and egg there, and mix everything again.
In several passes, add the dry flour mixture to the dough. The dough will remain sticky – this is normal.
Spoon the cookies onto the parchment at a distance from each other.
Bake in the oven for 35-40 minutes at 180 degrees.
