It is difficult to imagine a festive table in Asia without small fragrant donuts - Kazakh baursaks. Their recipe was passed down from generation to generation, eventually acquired many variations, but remained a favorite folk traditional delicacy.

Sift flour, add yeast, sugar and salt, mix.
Mix warm milk with water.
In a bowl with a mixture of dry ingredients, add the grated butter. Mix well.
Gradually pour the prepared liquid into the butter-flour mixture in small portions. Start kneading the dough.
At this stage, you may additionally need a small amount of flour. Important! Don't overdo it! The dough should be soft and slightly sticky, not clogged with flour.
Cover the finished dough with a towel and remove it to rise in a warm place for 1.5-2 hours.
When the dough has risen well, gently knead it and leave it to rise for another 30 minutes.
Roll out the dough 1-1.5 cm thick, cut out the circles with a small glass, cover with a towel and leave for proofing for 10-15 minutes.
Fry round tortillas in a large amount of heated vegetable oil until golden brown.
Remove the baursaks with a slotted spoon and use a paper towel to remove excess fat.
Serve ready-made Kazakh baursaks instead of bread for the first and second courses or as a sweet treat, after sprinkling with powdered sugar.
