The easiest way to quickly make thick peach jam is to add a little gelatin there. This will not affect the taste qualities or the safety of the workpiece in any way, but for the density of the fruit it will not need to be boiled in sugar for hours.

Pour boiling water over the peaches for half a minute, peel and remove the seeds.

Put them through a meat grinder.

Add sugar and citric acid, and bring to a boil.

Dilute gelatin in water according to the instructions.

Boil the peaches for 10-15 minutes, add vanilla and gelatin, and mix until smooth.

Remove the jam from the heat and pour into sterile jars.
