The recipe for caviar from zucchini and cucumbers for the winter is a great way to use an excess of seasonal vegetables and save them for the winter. Caviar turns out juicy and fragrant thanks to the addition of onions and spices. It can be used to make sandwiches, snacks or as a filling for pancakes.
Ingredients
- Zucchini - 1.5 kg
- Cucumbers - 500 g
- Onion - 2 pieces
- Carrots - 3 pieces
- Bell pepper - 3 pieces
- Tomatoes - 300 g
- Sugar - 3 art.l.
- Tomato paste - 70 g
- Citric acid - 1 tsp.
- Vegetable oil - 100 ml
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Peel and chop all the vegetables.
Fry onions and carrots in oil until soft.
Add pepper and zucchini, and fry for another 7 minutes.
Add tomatoes and simmer for another 5 minutes.
Add cucumbers, simmer again for 5 minutes and grind the caviar with a blender.
After that, add the remaining ingredients, except citric acid.
Simmer the caviar for another 40 minutes on low heat. Add citric acid 5 minutes before the end.
Roll the caviar into sterile jars.
