Cucumbers with Korean seasoning are a piquant, moderately spicy snack that will complement your any dishes well in winter. In order not to sterilize the workpiece, we will slightly dry the salad before preservation. I advise you to adjust the amount of spices at your discretion.

Ingredients

  • Cucumbers - 2 kg
  • Carrots - 500 g
  • Garlic - 1 head
  • Sesame - 3 tsp.
  • Nutmeg - 1/3 tsp.
  • Spices and seasonings (for Korean carrots) – 20 g
  • Vegetable oil - 100 ml
  • Vinegar (9%) – 100 ml
  • Sugar - 4 tbsp.l.
  • Salt - 2 art.l.

Step-by-step cooking recipe

Wash cucumbers, cut into cubes.

Peel the carrots and grate them on a grater for Korean carrots.

In a dry frying pan, fry the sesame seeds until golden brown, then cool.

Mix salt, sugar, nutmeg, seasoning for Korean carrots, crushed garlic and fried sesame. Add vinegar and vegetable oil, mix.

In a cooking pot, combine cucumbers and carrots, pour the dressing, mix gently. Put on fire, bring to a boil, then boil over low heat, stirring, for 15 minutes. Try the salad to taste, if necessary, adjust the amount of salt, sugar and spices at your discretion.

Pack the salad in pre-sterilized jars, pour the remaining marinade to the top. Roll up the jars, cool them and send them for storage in a cool dark place.
