Carefully sort and rinse the honeydew, and boil in salted water for about half an hour. Flip it into a colander.
Add the whole onion and all the other ingredients, bring to a boil, and cook everything together for another 15 minutes.
Remove the onion and roll the honeydew into sterilized jars.
