Peel the beets and carrots and grate them on a coarse grater. Tomatoes and hot peppers pass through a meat grinder. Finely chop the onion.
Fry carrots and onions in preheated vegetable oil until transparent.
Add the tomato mass, stir, bring to a boil, then add the grated beetroot.
Add salt to the caviar, add sugar and spices, stir and simmer over low heat, stirring occasionally, for 1-1.5 hours (depending on the beet variety).
5 minutes before cooking, add vinegar and crushed garlic, mix well.
Pack the boiling caviar in pre-sterilized jars, roll it up, turn it upside down, wrap it up and leave it to cool completely. The cooled caviar can be stored at room temperature.
