Don't know how to use overripe cucumbers? Then save a simple recipe in a piggy bank. After all, nothing goes missing from a good hostess! Caviar turns out to be very tasty, in winter it will perfectly complement any side dishes and poultry and meat dishes.

Ingredients

  • Cucumbers - 500 g
  • Carrots - 1 pcs.
  • Onion - 1 pcs.
  • Garlic - 2 cloves
  • Tomato paste - 1 art.l.
  • Black Pepper (with peas) – 5 pcs.
  • Bay leaf - 1 pcs.
  • Vegetable oil - 50 ml
  • Vinegar (9%) – 30 ml
  • Sugar - 1 art.l.
  • Salt - 15 g

Step-by-step cooking recipe

Wash cucumbers, peel, cut into small cubes.

Grate the carrots on a coarse grater, chop the onion finely.

Combine cucumbers, onions and carrots in a cooking pot. Add salt, sugar, tomato paste, peppercorns and vegetable oil. Mix everything well and simmer over low heat until tender.

5 minutes before the end of cooking, add vinegar, mix.

Pack the boiling caviar in pre-sterilized jars and roll it up. Store the cooled workpiece in a cool, dark place.
