Cherry plum and tomato tkemali for winter
There are dozens of tkemali recipes, and among them it is impossible to single out one universal one. Everyone has their own secrets and subtleties, as with any signature national dishes with a rich history. This time we will prepare tkemali from cherry plum and tomatoes.
Ingredients
- Cherry Plum - 2 kg
- Tomatoes - 2 kg
- Onion - 300 g
- Parsley - 1 bundle
- Basil - 1 bundle
- Carnation - 1 tsp.
- Cinnamon - 1 tsp.
- A mixture of peppers with peas (ground) – 1 tsp.
- Mustard - 1 tsp.
- Sugar - 200 g
- Salt - 1 art.l.
- Chili pepper - 1 piece
- Vinegar - 100 ml
Step-by-step cooking recipe
Remove the seeds from the cherry plum, peel the tomatoes and put everything through a meat grinder.
Send the onion and chili there as well.
Bring the sauce to a boil, add sugar and stir.
Dip all the greens into the boiling sauce in one bunch, boil for a couple of minutes and remove.
Add spices and boil the tkemali for another 25 minutes on low heat.
Rub the sauce through a sieve, boil for another 25 minutes and pour in the vinegar a couple of minutes before the end.
Roll up the tkemali in sterile jars.
