Lecho with hot pepper and tomatoes for winter

Sweet Bulgarian pepper goes into the traditional lecho. But if you prefer more savory preparations, then I advise you to try this recipe with hot pepper and tomatoes. Such lecho can be served separately or added to other dishes.
Ingredients
- Bell pepper - 1 kg
- Hot red pepper - 200 g
- Tomatoes - 1 kg
- Garlic - 1 head
- Vegetable oil - 100 ml
- Parsley root - 1 piece
- Sugar - 0.5 glasses
- Salt - 25 g
- Vinegar - 50 ml
Step-by-step cooking recipe
Chop tomatoes, hot pepper, parsley root and garlic in a blender.
Add the oil and bring the mass to a boil.
Add salt, sugar and chopped pepper.
Simmer lecho for 45 minutes on low heat. Towards the end, pour in the vinegar.
Roll up the lecho in sterilized jars.
