First wash and peel all the vegetables. Cut beets, carrots and onions into thin strips.
Put them in a large saucepan, add oil, a third of vinegar and mix.
Pour water to the vegetables, bring to a boil and simmer for 10-15 minutes under a lid on low heat.
Chop tomatoes in a blender or grate them on a grater. Pour the tomato puree and the remaining vinegar into the pan with the rest of the vegetables.
Add sugar, salt, pepper and bay leaf. Simmer all together for about 40 minutes – until tender.
Pour the borscht dressing into sterilized jars and roll it up.
