Here is another of my favorite recipes for spicy adjika, this time – from plums and tomatoes! Sweet fruits, tomato sourness, favorite spices – just the perfect balance of flavors. And also so multifaceted. I use this adjika as a sauce for meat dishes and sandwiches.
Ingredients
- Tomatoes - 1 kg
- Bell pepper - 1 kg
- Plums - 1 kg
- Hot red pepper - 200 g
- Garlic - 1 head
- Vinegar - 100 ml
- Vegetable oil - 100 ml
- Sugar - 50 g
- Salt - 20 g
- Hops-suneli - 1 art.l.
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Remove the seeds from the plum, peel the tomatoes and put everything through a meat grinder with two types of pepper.
Bring the mass to a boil, add oil, salt and sugar, and simmer for 1.5 hours on low heat.
Add vinegar, spices and crushed garlic.
Simmer for another 10 minutes and roll the adjika into sterile jars.
