It seems that Mother–in-law's tongue is one of the most popular vegetable salads for the winter in all families where preparations are made. And today I will gladly share with you my favorite option – eggplant with onions and carrots. After all, every hostess has her own tricks and secrets, and I am no exception.

Randomly slice the eggplant and fry until browned.

Chop the remaining vegetables separately. Fry the onion and carrot, add the tomatoes and simmer for 10 minutes.

Put the eggplants there, add salt and sugar, and simmer for another 15 minutes.

Pour in the vinegar, simmer for another 5 minutes and roll the salad into sterilized jars.
