I hasten to share with you a proven recipe for pickle with pearl barley, fresh cucumbers and tomatoes for the winter. Add it to the finished broth, bring it to the spices and boil for 10 minutes. Just like that, you will get a whole pot of delicious soup.
Ingredients
- Pearl barley - 300 g
- Tomatoes - 500 g
- Cucumbers - 500 g
- Onion - 200 g
- Parsley - 20 g
- Vegetable oil - 50 ml
- Vinegar - 50 ml
- Ground black pepper - 0,5 tsp.
- Bay leaf - 3 pieces
- Sugar - 60 g
- Salt - 40 g
- Water - 1,5 l
Step-by-step cooking recipe
Pre-soak the pearl barley for 2-3 hours.
Rinse, place in a saucepan with cold water and boil for 40 minutes.
Prepare vegetables and parsley, chop.
Place tomatoes on the bottom of the cauldron, add sugar and simmer for 10 minutes.
Separately fry the onion in oil until golden brown.
Mix both blanks, add cucumbers, parsley, spices, boiled pearl barley, salt and simmer for 20 minutes on low heat.
Pour in the vinegar, mix and close in clean, dry jars.
