You can cook pancakes at least every day. There is always a new recipe, an original supplement or something that I've wanted to try for a long time. Today I offer an interesting option on ryazhenka. The dough turns out soft and with a slight sourness.
Ingredients
- Ryazhenka (warm) – 400 ml
- Chicken eggs - 2 pieces
- Flour - 280 g
- Young zucchini - 200 g
- Baking soda - 1 tsp.
- Salt - 0,5 tsp.
- Vegetable oil (for frying) – 80 ml
Step-by-step cooking recipe
Grate the young zucchini on a fine grater.
Sprinkle with salt and leave for 10-15 minutes at room temperature.
Squeeze the grated zucchini from the resulting juice.
In a separate container, mix warm fermented baked milk and soda.
Add lightly beaten eggs, flour and grated zucchini. Stir until smooth.
Spoon small pancakes into a preheated frying pan with oil. Fry on both sides until golden brown and put on a paper towel to remove excess oil.
